Use a 27.5cm x 17.5cm slice tin

Grease and line with bake paper - leave enough overhang on long sides to lift slice out once cooked and cooled

Preheat oven to 160 degrees centigrade (slow oven - the temperature may vary depending on your oven)

 

Ingredients

Slice

185g unsalted butter melted

3 Weetbix crushed or use a combination of Weetbix and/or other cereal (I often use Guardian) to make up 60g

1 x cup self raising flour

1 x cup brown sugar

1 x cup desiccated coconut


Icing

1 x cup icing sugar mix

3 x tbs chocolate Quik

1 x level tbs softened butter

approx. 1 tbs hot water

a bit of extra coconut for sprinkling on icing

 

Method

 

Mix all dry ingredients in a medium sized bowl until well combined

Make a well in the centre and pour in melted butter

Mix well with a wooden spoon or knife until all ingredients are moist and well combined

Press evenly into slice tin 

Bake in slow oven for 15 to 20 minutes or until light golden in colour

Remove from oven and leave in pan to cool

 

When slice is slightly cool, lift from pan using long edges of bake paper

Place on cooling rack and allow to cool almost completely


When slice is cool…
Place icing sugar mix, Quik and butter in a small bowl

Slowly add water in small amounts while mixing with wooden spoon to a spreadable consistency 

Spread icing onto slice and sprinkle with extra coconut

Cut into squares (approx. 20 pieces)
